Herb Salt

This is the absolute most simple recipe. The proportions don't matter so much. It works with any leafy herb. I love to use this recipe with wild edibles to make sure I get nutrient variety every day. Herb salts make every soup taste better, and make popcorn feel so fancy. Use it on any and every savory dish you make. Not only does it taste great, you're also adding more nutrients to your meals by using this.


Herb Salt

1/2 - 1 cup fresh herbs (rosemary, thyme, parsley, nettle, etc)

1/2 cup coarse salt (Himalayan Pink Salt is my fav)

1 cup fine sea salt


Place coarse sea salt and fresh herbs in a food processor. Pulse, grinding salt until the herbs have a fine consistency.


Add 1 cup sea salt and pulse to combine. Pour salt mixture into a shallow baking dish and let air dry for 2+ hours. Transfer salt to a glass jar with a secure lid.


I have found that humidity affects the drying time. For humid days, allow up to 24 hours or increase the salt ratio.
